- One 3kg pastry roll corresponds to about 8 tarts of 8 portions each.
- Prepare your filling first and only roll out the pastry at the last moment, leaving it in the fridge as long as possible. The colder the pastry, the better the results.
- Flaky pastry should always be put into a hot oven (200°C).
- To limit shrinkage of the pastry, it is best to leave it to stand for 30 minutes in the fridge before baking.
